Banana Custard Pudding


Ingredients :

2 1/2 c Sugar
1/2 c All-purpose flour
1/4 c Cornstarch
7 c Milk
4 ea Egg yolks, beaten
1/4 c Butter, softened
1 t Vanilla extract
1 pk (12-oz) vanilla wafers
9 ea Med bananas, peeled & sliced


Directions :

Combine sugar, flour, and cornstarch in a medium mixing bowl. Mix well, and 
set aside. Pour milk into a large saucepan; cook over medium heat until 
candy thermometer registers 160 deg F. Gradually stir one-fourth of hot 
milk into yolks; stir into reserved dry ingredients, and add to remaining 
hot milk. Cook, stirring constantly, until mixture thickens and coats the 
spoon. Remove from heat, and stir in butter and vanilla. Let cool to room 
temperature. Line bottom of a 13 x 9 x 2-inch baking dish with one-third of 
the vanilla wafers. Arrange half of banana slices over wafers; top with 
half of cooled custard. Repeat layers, reserving one-third of wafers to 
crumble and sprinkle over custard.
Chill thoroughly.

Chocolate Sponge Custard


Ingredients:
3 eggs, separated 
1/4 teaspoon cream of tartar
1 1/4 cups milk
1/3 cup chocolate-flavored syrup
1/4 cup all-purpose flour 
3/4 teaspoon vanilla 
Marshmallow fluff or whipped cream, optional


Directions:
In small mixing bowl at high speed, beat egg whites with cream of tartar until stiff but not dry, just until whites no longer slip when bowl is tilted.
In small mixing bowl, at high speed, blend or beat yolks, milk, syrup, flour, and vanilla until smooth. Gently, but thoroughly, fold into beaten whites. Place 6 (6 oz.) lightly greased custard cups in large baking pan. Pour egg mixture into cups. Place pan on rack in preheated 350ºF oven. Pour very hot water into pan to within 1/2 inch of top of custards.
Bake until puffed and cake tester or wooden pick inserted near center comes out clean, about 30 to 35 minutes. Remove promptly from hot water. Cool at least 5 minutes before serving. Top with a dollop of marshmallow fluff or whipped cream.

Festive Filo Tarts



Ingredient :
200 g filo pastry
melted butter, for brushing

1 small butternut squash, peeled, deseeded and cut into 2cm cubes
3 tablespoons olive oil

50 g pecans, toasted
50 g dried cranberries
chilli flakes to your taste
100 g vegetarian blue cheese
Preparation :
To make the filo tarts, heat the oven to 160ºC and cut the pastry into squares that are slightly bigger than the tart tins. Brush each sheet with melted butter and layer in the tin, about 5/6 squares per tart, each sheet at an angle to the previous one, so you have a starry shape with pointy edges. Bake for 10-20 minutes, depending on the size you are making, or until golden. Set aside.

Heat the oven to 200ºC. Spread the cubes of butternut squash on a baking tray, toss with the olive oil and a little salt and pepper. Roast for 25-30 minutes or until soft. Remove from tray and cool.

The two steps above can be done a couple of hours ahead.

To finish the tarts, heat the oven to 160ºC. Place the roasted squash in the filo cases and sprinkle with the pecans, dried cranberries and a few chilli flakes. Bake for 10-15 minutes, until warm and then crumble the cheese over the top. Return to the oven for about 5 minutes, until the cheese has melted. Serve warm.

Cereal Tarts With Yogurt and Fresh Fruit Recipe



Ingredients
Fresh fruits (2 2/3 c),
vanilla yogurt (16 ounces),
plain yogurt (16 ounces),
maple syrup (6tbsp),
unsalted butter,
melted (1strips),
pecans (1c), cornflakes (5c).

Method of preparation:-
First heat the oven to 350 degrees F. Make the tart shells. Take eight 4-inches round tart pans with removable bottoms, place them on baking sheet and set it aside. Take a food processor fitted with metal blades, put cornflakes and pecans in the bowl of processor. Process the mixture for about 10 short pulses until it gets mixed properly. Then pour this mixture into a large bowl. Sprinkle melted butter over it and then mix the maple syrup in it. Pour this cereal mixture in tart pans and press the mixture along the bottom and sides to form shells. Bake the tarts for about 10 minutes and then place them on wire rack to cool. Now remove the shells from the molds and place them on serving dish. Top each tart shell with ¼ cup of yogurt and 1/3 cup of fruit. Now the cereal tarts are ready to serve.

Seafood Tarts



Pastry for the tarts:


2 cups all-purpose flour
1 1/2 sticks or 3/4 cup (12 tbsp) cold unsalted butter, cut into cubes
1 tsp of salt
6 tbsp ice water (more or less)

1. Pulse in a food processor the flour, butter, and salt just until the mixture resembles a coarse meal with some small (pea-size) butter lumps.
2. Drizzle 5 tbsp ice water evenly over the mixture. Pulse until incorporated. Squeeze a small handful of the dough, if it doesn’t hold together, add more ice water, 1/2 tbsp at a time, pulsing until combined. Do not overwork the dough, or the crust will be tough.
3. Turn the dough out onto a work surface. Gather the all dough together then divide it in half. Flatten each half into a disk. Wrap each disk in plastic wrap and chill until firm, at least 1 hour.

Ingredients for the filling :

2 cup of cooked shrimp – roughly chopped
1/2 cup of artificial crabstick – roughly chopped
1 stalk of celery – cut into tiny cubes
3 spring onions - finely chopped
1 egg
1/2 cup of low fat cream cheese
1/2 cup of light mayonnaise
1 tsp of chili powder
1/2 tsp of sugar
2 tbsp of lemon juice
Salt and pepper to taste

1. In a mixing bowl mix all the filling ingredients together until well combined. Set it aside.
2. Roll about the dough to about 1/8” and line the pastry into little tart moulds.
3. Fill it up with the filling and bake in a pre-heated 350 degree F for half an hour or until the crust is golden brown.
Serve warm or at room temperature.

Harvest Sweet Potato Pecan Pie Tarts

Ingredients


  • ·                                 1 cup mashed cooked sweet potato
  • ·                                 3 tablespoons granulated sugar
  • ·                                 1/4 teaspoon ground cinnamon
  • ·                                 1/8 teaspoon salt
  • ·                                 1/3 cup chopped toasted pecans
  • ·                                 1/4 cup firmly packed brown sugar
  • ·                                 1 tablespoon dark corn syrup
  • ·                                 1/2 teaspoon vanilla extract
  • ·                                 1 egg white
  • ·                                 2 (2.1-ounce) packages mini phyllo shells (such as Athens)

Preparation

  • ·                                 Preheat oven to 350°.
  • ·                                 Combine sweet potato, granulated sugar, cinnamon, and salt, stirring well.
  • ·                                 Combine pecans, brown sugar, syrup, vanilla, and egg white, stirring well.
  • ·                                 Spoon about 1 teaspoon sweet potato mixture into each phyllo shell, spreading to edges. Spoon about 1/2 teaspoon pecan mixture over sweet potato mixture. Place filled shells on an ungreased baking sheet. Bake at 350° for 20 minutes. Cool completely on a wire rack

Chocolate Raspberry Tiramisu

Ingredients :


  • ·                                 1/4 cup powdered sugar
  • ·                                 1/4 cup (2 ounces) mascarpone cheese, softened
  • ·                                 1/4 cup raspberry-flavored liqueur, divided
  • ·                                 1 (8-ounce) block fat-free cream cheese, softened
  • ·                                 12 cake-style ladyfingers, split
  • ·                                 1 1/2 tablespoons unsweetened cocoa
  • ·                                 2 cups fresh raspberries
  • ·                                 Mint sprigs (optional)
Preparation :

  • ·                                 Place powdered sugar, mascarpone cheese, 1 1/2 tablespoons liqueur, and cream cheese in a large bowl; beat with a mixer at high speed until well blended.
  • ·                                 Brush cut sides of ladyfingers with 2 1/2 tablespoons of liqueur. Spread about 1 1/2 tablespoons mascarpone mixture over bottom half of each ladyfinger; cover with tops.
  • ·                                 Arrange 3 filled ladyfingers spoke-like on each of 4 dessert plates. Sprinkle evenly with cocoa. Arrange 1/2 cup raspberries over each serving. Garnish with mint sprigs, if desired
